Day 92 – Rainy Day Picnic

Memorial day is for remembering those who have gone on before us, but sometime a good BBQ with family is a great way to is just the way to do that. My brother and his wife came down late Sunday and had to leave early Monday afternoon so we made the best of it by staying up late talking about life and family. It was a really good time. However, because of that we slept in and didn’t have a lot of time to do a real BBQ. So we made appetizers and threw some stuff on grill. We even tried to eat outside until the rain and the cold drove us back inside.

The glaze on the pineapple and chicken was amazing. I hope Belinda will share the recipe in the comments. 🙂

ha ha ha here is my pineapple/chicken glaze/ cook bananas in for ice cream sundays.

1/2 stick butter (not margarine)
1/4 c. honey (flavored honey is also fun to use too)
1/2 c. brown sugar
1/4 t. cinnamon
Dash of your favorite spice(s) I use: nutmeg, allspice, valencia orange peel, cardamom, candied ginger
1/2 t. vanilla

In a saucepan over medium high heat melt butter. Once butter is melted add remaining ingredients except for vanilla and bring to a boil. Allow to boil for one minute while stirring constantly. Take off heat. Add vanilla and stir. This is when I will add bananas just until soft or brush on pineapple/chicken etc.

This recipe can easily be doubled, tripled etc for feeding larger groups. I made one batch of the above recipe and it was plenty for one entire pineapple and a dozen chicken legs/thighs. Enjoy!
